Healthy and natural unicorn smoothie!Β 

I’ve jumped on the unicorn bandwagon! No, I haven’t tried the Starbucks frappucino but I did make my own unicorn smoothie from whole ingredients. If you want to learn how, keep reading. πŸ¦„

For this recipe you will need, as pictured:

  • Half a cup of yogurt (plain, Greek or fruit. Sub with coconut milk for vegan alternative)
  • 1 cup of strawberries
  • 2 diced bananas
  • Half a cucumber, diced
  •  Half a cup each of blackberries and blueberries
  • One cup of diced pineapple
  • 1 cup of water (you can also use ice cubes)

This will make 2-3 servings depending on the size of your glasses. Feel free to adjust the amounts. You can also add vanilla protein powder if you want the smoothie to be a bit more filling.

You are going to need to make this smoothie in layers. First, combine the strawberries, 1/3 of the bananas and cucumber, 1/3 of a cup of water (or more or less depending on your desired consistency), and 1/4 cup of yogurt. Blend together until smooth and then pour into glasses, filling only 1/3 of the glass, as shown below.

Next, give your blender a good rinse. Toss in about 3/4 cup of pineapple, 1/3 of the cucumber and bananas and 1/3 cup of water. Blend and pour into the glasses, leaving room for one more layer.

Finally, toss the blueberries, blackberries, as well as the remaining cucumber, pineapple, yogurt and water into the blender. Blend and add to the glasses. The finished product should look like this:

Garnish with fresh fruit and shredded coconut and enjoy!
