I just wanted to write a quick post to wish a happy and safe Thanksgiving weekend to all my Canadian friends! If you have leftover turkey, like I know I will, I have the perfect recipe to make a healthy and detoxifying post-holiday soup.
Two whole carrots, peeled and cut into bite size pieces
Two celery stalks, diced
Half a red onion, finely chopped
Half a head of green cabbage, finely chopped
Three cups of finely shredded leftover turkey or chicken
One pack of Seeds of Change Spanish Style rice (you can substitute for plain brown rice or quinoa, I just find that this packet has just the right seasoning and mixture of whole grains)
One litre of organic chicken broth
About two litres of fresh water
Salt (Himalayan or sea salt), pepper, paprika, parsley, thyme, oregano to taste
I like to carmelized the onions in a pan with olive oil, before adding the celery and carrots to simmer. After that you can go ahead and add the other ingredients. The trick is to shred the meat (easiest way is to use two forks), rather than just cutting it into pieces. This way the flavour can really soak in as your soup cooks. Bring everything to a boil in a large pot and then turn down the heat and simmer on low for an hour or as long as you like. You can also substitute the veggies for whatever you have in your kitchen; that’s what I love so much about soup! Don’t be afraid to experiment. Have a great weekend!
